    Serves 4
    Ingredients:
    Dressing:
    1/4 cup vinegar, red wine
    1 1/2 tbsp olive oil
    1 tbsp apple juice concentrate, frozen, thawed
    1 1/2 tsp thyme, dried
    1/2 tsp salt
    1/4 tsp pepper

    Salad:
    8 oz pasta, fusilli, uncooked
    3 apples, mcintosh, cored and diced
    2 tbsp lemon juice
    1/2 lb fennel, trimmed and thinly sliced
    1 small lettuce head, boston

    Method:
    Dressing: In a small bowl, combine all dressing ingredients. Mix well.
    Salad: Boil pasta in salted water until cooked al dente, about 10 minutes. Drain and set aside. In a medium bowl, toss apples and lemon juice. Stir in fennel and toss well.Combine pasta and apple fennel mixture in a medium serving bowl. Add dressing and toss well.
    Serve on a bed of lettuce.

    Ingredients:
    1 cup long grain brown rice
    1/2 tsp salt
    1/2 tsp curry powder
    3 cup water
    3 boneless turkey breasts
    1/2 lemon, juice of
    1/8 tsp pepper
    1 large apple, peeled, cored and sliced
    2 tbsp sesame oil
    2 tbsp lemon juice
    1/4 cup defatted chicken stock
    1/4 cup sesame seeds
    2 tbsp fresh dill for garnish
    1 lettuce leaves

    Method:
    Combine rice,1/4t salt, 1/4t curry powder, and water in saucepan.
    Cover and cook over low heat 35 minutes. Sprinkle turkey with lemon juice and pepper. Lay turkey on top of rice during last 20 minutes of cooking time, turning after 10 minutes. Drain rice.
    Cut turkey into strips. Set a few apple slices aside and sprinkle with lemon juice.
    Chop remaining slices and combine with rice, turkey, sesame oil, lemon juice, stock, remaining salt and curry powder. Heat dry frying pan. Toast sesame seeds until browned.
    To serve, arrange rice salad on serving plate, sprinkle with sesame seeds and garnish with dill, lettuce, and reserved fruit slices.

    Cake Ingredients:
    3 cup cake flour
    2 1/2 tsp baking powder
    3/4 tsp salt
    2/3 cup shortening
    1 3/4 cup sugar
    2 eggs
    1 1/4 cup milk
    1 1/2 tsp vanilla

    Method:
    Cream sugar and shortening and add the eggs and beat 2 minutes.Mix flour, baking powder and salt and add alternately with the milk and vanilla. Pour into greased pan lined with wax paper and bake in
    350 F oven for 30 -35 minutes for layers and 45 – 50 minutes if using 13x 9 1/2 x 2 in. pan.

    Apple Cheese Icing Recipe:
    Ingredients:
    2 sweet dessert apples 200 g *
    1 tsp powdered veggie gelatin dissolved
    4 tbsp hot water (for gelatin)
    1/3 cup skim milk cheese or cottage

    Method:
    2 apples, cored and sliced. Suggested Golden Delicious – stay white. when cooked. Cook the apples to a soft pulp in a little water and allow to cool. Place in a blender with the dissolved gelatin, cheese
    and coloring, and blend to a smooth puree. Leave to set, then spreadon the cake and pipe if desired.
    This spread, covered, keeps well in the refrigerator and may be deep-frozen.
