Ingredients:
2 cups Wheat Flour (Gehun Ka Atta)
Water as per requirement
Method:
Knead soft dough with above ingredients.
Leave it for atleast 30 minutes.
Break off to a table tennis – ball sized (even smaller) bit of dough.
Roll with help of dry flour to a thin round.
Roll as thin as possible.
Heat tawa and place phulka on it.
When dry on one side, turn it.
When brown spots appear on second side, turn again.
Use a kitchen towel and lightly press the phulka, rotating at same time, it will puff.
Make as crisp as desired. Serve hot.

ngredients:
2 tablespoons margarine (or butter)
1 onion, diced
1 leek, halved and sliced
1 huge sweet potato, peeled and cubed
1 can corn, strained with liquid reserved with half the corn
3 cups soy milk (or milk, approximately)
Salt and pepper to taste
Method:
Melt butter. Sweat onion and leek until translucent. Toss sweet potato into pot and saute’ until golden. Toss in corn without liquid.
When corn is fragrant, stir in the rest of the corn and liquid, and then the milk. Cook covered on a medium flame until the potato is completely soft.
Blend with immersion blender (or remove and use conventional blender or food processor) until sweet potato is completely pureed and corn is about half pureed. Add salt and pepper to taste.
Option: Add herbs according to taste

Ingredients:
6 cups water
5 cups zucchini, chunked
1 onion, chunked
3 cloves garlic
1-1/2 tablespoons soy sauce
1/2 cup oats
1 tablespoon dill weed, dried
1/4 teaspoon white pepper
Method:
Bring water, zucchini, onion, garlic, soy sauce and oats to a boil. Reduce heat. Add dill weed and pepper, cover and simmer 8-10 minutes.
Blend vegetables and broth in three batches in a blender until smooth and creamy. (This is a beautiful soup!) Serve immediately.
Option: Serve with garlic bread for dipping or with croutons. Garnish with fresh dill if desired.
