    Ingredients:
    Green coriander leaves  1 cup
    Green chili  2
    Ginger  1/4 inch
    Lemon juice  2 tbsp.
    Salt to taste

    Method:
    1.  Grind coriander leaves, ginger and green chili together.
    2.  If the paste is too thick, add little water.
    3.  Then add lemon juice and salt. Mix well.

    Ingredients:
    1 cup pitted, chopped dates
    1/2 cup chopped dried figs
    1/3 cup sweet Passover wine
    3 tbsp. sesame seeds
    1 tsp. ground ginger
    pinch of coriander
    1 small red chili pepper, seeded and minced, or a pinch of cayenne
    2 tbsp matzo meal

    Method:
    In a large bowl, combine the dates, figs, and wine. Add the sesame seeds, ginger, coriander, chili pepper, and matzo meal and blend thoroughly. Roll into 1″ balls or serve in a bowl.

    Ingredients:
    3 cups flour
    1 cup sugar
    1 cup oil
    1 cup corn syrup
    3 eggs
    2 tsp. mixed spice (see note)
    2 tsp. cinnamon
    4 tsp. ginger
    2 tsp. baking soda mixed with 1/4 cup warm water
    3/4 cup water

    Methd:
    Mix all ingredients. Food processor is terrific for this cake.
    Optional: add some fruit or to make this cake spectacular, melt together 2 oz. butter or margarine with 3/4 cup brown sugar. Add pecans to this mixture.
    On the bottom of the tube tin, throw in the nut mixture. Top this with apples (tinned or fresh). Then pour the ginger cake mixture on top of this and bake.
    When you invert the cake the apples and nuts look interesting and taste delicious too.
    Bake at 350°F for 50 minutes.
