    Ingredients:
    1/2 kg curd
    2 onion (finely chopped)
    1 green chiily (finely chopped)
    1 ginger (finely chopped)
    few coriander leaves (finely chopped)
    1 tsp oil for tadka
    1/4 mustard seeds (small)
    1 tsp salt

    Method:
    Beat curd.
    Add onion, salt, green chilly and coriander leaves.
    Heat oil in a large spoon. Add mustard seeds.
    Add it to the raita. Mix well.
    Refrigerate for 1-2 hours before serving.
    Serve the onion raita with imli rice.

    Ingredients:
    1-1/3 cups orzo, cooked, drained, and rinsed
    1 cup dried apricots, sliced
    1/3 cup scallions, thinly sliced, both white and green parts
    1 tsp. cilantro, finely chopped
    1/4 tsp. ground coriander
    1/3 cup almonds, sliced, toasted
    4 to 5 tbsp. Ginger Oil (click here for recipe)
    Juice of 1/2 lemon
    Salt
    Pepper

    Method:
    Mix orzo, apricots, scallions, cilantro, and coriander together.
    Add ginger oil and mix well. Add lemon, and salt and pepper. Just before serving, stir in almonds. Serve slightly cold or at room temperature.
    This can be made ahead. Just wait until serving to stir in the almonds.

    Serves: 8 to 10
    Ingredients:
    2 whole chickens cut into quarters or eighths
    2 to 3 cloves garlic, minced
    Olive oil
    Cinnamon
    Cardamom
    Cayenne
    Curry powder
    Brown mustard seeds
    Salt and pepper

    Method:
    Mix everything except the chicken in a mortar and pestle until it forms a thick paste. Rub all over the chicken. Bake chicken for about 45 minutes in a 350°F oven or until done.
