    Ingredients:
    1 cup pitted, chopped dates
    1/2 cup chopped dried figs
    1/3 cup sweet Passover wine
    3 tbsp. sesame seeds
    1 tsp. ground ginger
    pinch of coriander
    1 small red chili pepper, seeded and minced, or a pinch of cayenne
    2 tbsp matzo meal

    Method:
    In a large bowl, combine the dates, figs, and wine. Add the sesame seeds, ginger, coriander, chili pepper, and matzo meal and blend thoroughly. Roll into 1″ balls or serve in a bowl.

    Serves: 4 to 6
    Ingredients
    1/2 pound beef, cut into 1″ cubes
    1/2 pound mutton, cut into 1″ cubes
    2 ounces margarine or 2 tablespoons cooking oil
    6 ounces sliced onions
    4 ounces sliced carrots
    2 ounces flour
    4 pint beef stock
    Small handful whole herbs (celery, thyme, parsley, bay leaf) tied in leek leaves
    Salt and cayenne pepper
    5 ounces Madeira

    Method:
    Melt the margarine and fry the meat and vegetables until lightly browned. Sprinkle in the flour and cook until brown.
    Gradually stir in the stock; bring to boil, add the herbs and simmer for 2 hours or until meat is tender. Season with salt and pepper. Run through a sieve or blend in a blender. Reheat soup and add wine.

    Serves: 10 to 12
    Ingredients:
    1-1/2 cups potato starch
    1 tablespoon baking powder
    3/4 cup red wine
    2 tablespoons orange zest
    3 tablespoons brandy or rum
    6 eggs, whites and yolks separated
    Pinch of salt
    1-1/2 cups sugar
    1/2 cup extra virgin olive oil
    1-1/4 cups finely ground almonds

    Method:
    Preheat oven to 350°F.
    Combine the flour and baking powder and set aside. Combine the wine, orange zest, and brandy in another bowl and set aside.
    In a third bowl, beat the egg whites and salt until stiff. Using an electric mixer, cream the yolks and sugar until the mixture falls in ribbons from the beaters. Add the oil and mix again.
    Beginning and ending with the dry ingredients, add the flour mixture, alternating with the wine. Mix until just combined. Add the nuts and mix until just combined. Gently fold in the egg whites with a wooden spoon.
    Pour the batter into a greased 10″ spring form pan. Bake for 1 hour or until knife inserted comes out clean. Remove from mold and turn upright to serve.
